What an amazing little idea…all the way from Basque..yes that little country that is somewhere between France and Spain…

Saute some onions in olive oil…add peppers, thyme, salt, pepper even some garlic. Yup, the colors of the Basque flag!

After 8 minutes , add the tomatoes.

You can either add the the scrambled eggs ( with a bit of salt and whipping cream) to the mix, or keep them seperate and serve them as such. Voila!
